Refreshing and Delicious Nutty Vegan Lemon Bars – Vegan, Gluten-Free, Raw

I’ve been doing a lot of vegan desserts lately. Vegan chocolate bars, vegan lemon cake… But this… by far is the best. It’s creamy, it’s nutty, it’s addictive! The zing of lemon with the crunchiness of the nuts compliments each other nicely. Fun fact, I actually don’t like nuts! And this was the first time I liked them.

The recipe was pretty much our own, with lots of brainstorming, depending on the ingredients we had at the time… I can’t be more happy with how it turned out!

Just think of it, guys. Vegan, gluten-free, raw.. and it tastes so fabulous.

Before we get into it, reasons why this is the best vegan dessert I’ve made till now šŸ˜‰

Hehe, let’s get into it.

Vegan Lemon Bars

Ingredients:

For the base

  • 15g coconut oil, plus extra for greasing
  • 50g blanched almonds (This is a very flexible recipe – if you don’t have almonds you can use any other nuts you like)
  • 50g pittedĀ dates

For the lemon topping

  • 150g soaked cashew nuts
  • 3 teaspoons of palm sugar/brown sugar (add more or less depending on your sugar. Keep tasting!)
  • 1 tsp of coconut oil
  • 1 tsp of water
  • 70g of almond milk/cashew milk
  • 2 or more lemons, zested and juiced
  • 2 tablespoons of grated dark chocolate (optional)

Put the cashews in a large bowl, and pour water over it and leave it to soak for around 1 hour. While it’s soaking, blitz together the ingredients for the base along with a pinch of salt. You may have to remove it a few times, mix it around and blitz again. It’s your choice whether you want the base to be coarse or fine. Once done, grease your tin with some coconut oil, press the base and leave it in the fridge until your topping is done.

Drain the cashews and add to the cleaned out food processor. Add all the ingredients for the topping, while leaving a little bit of the lemon zest for later. Blend all the ingredientsĀ until creamy and smooth. Pour it into your tin, and smooth it out. Before serving, sprinkle the remaining lemon zest on top, and if you like some grated dark chocolate. Keep it in the freezer to set for at least 3-4 hours or overnight. Take it out, cut it into square pieces and enjoy!

I have to say I have been having these guilty-free and hogging onto them whenever I have a sweet craving! I can’t get over how they are so healthy and still taste so good. I hope you try these too. Trust me, you won’t regret it.
