Healthy Lemon Cupcakes

Lemon and Orange – These two flavors are my kind of favorite after the most-favorite one, which is Chocolate. I really wanted to try lemon cupcake in a couple of weeks, because we made Orange Cake a while ago. So, we tried it yesterday—and it was amazing! This simple, light, and fluffy lemon cupcake is just the right way to pop up your mood with the zing of lemon!

Here’s a small and simple recipe to the scrumptious lemon cupcake!

Makes 7 Cupcakes.

Important Notes: The amount I have shared is roughly written, you can variate it depending on how lemony you want your cupcake. Ours was very lemony. If you’re adding less lemon juice increase the amount of milk. But in the end the batter should be scoop-able consistency, and not pour-able.

Ingredients:

  • 1 Cup of Wheat Flour(I like to keep it wheat flour instead of refined)
  • 1 Teaspoon of Lemon Zest(it’s not easy to scrape the lmon rind to get zest, but even a little zest is worth all the effort)
  • 2 Tablespoons of Fresh Lemon Juice
  • 3/4 Cup of Sugar
  • Half Teaspoon of Organic Vanilla Powder(you can use half teaspoon of vanilla extract also, but try to use a natural one)
  • 1 Teaspoon of Ghee(you can substitute Ghee with Butter)
  • A pinch of Salt
  • 1 Teaspoon Baking Powder
  • 1/4 Teaspoon Baking Soda

To Prepare The Batter:

First, mix all the dry ingredients together(wheat flour, baking powder, baking soda, vanilla powder(if using extract, don’t add now), salt). Then, blend the Ghee and Sugar together till it’s nice, and fluffy. Next, add the lemon juice with the Ghee and Sugar, and blend well. Add 1/3 of the dry ingredients with the Ghee, Sugar and Lemon Juice, and blend really well. While blending, add the lemon zest. If you’re using Vanilla Extract, than add it while blending, too.

The Icing(Optional):

Now, once your batter is ready, you may want to make up some lemon icing, do you? If yes, than here’s the recipe. I didn’t make the icing, but brought some whipped cream powder from the market, put it in 90 ml water, blended it really well, added some lemon juice, and refrigerated it for 15 minutes. If you’re making the icing, than just add some heavy whipped cream, sugar, and lemon juice, and blend it.  Ofcourse, the healthier the better, but if you want your icing a little color, nothing happens, right? 🙂 So… here we go!
